Instructions for preparing

  • 1.We clean the root legume and cut it into cubes.
  • 2.Heat 20 g of butter in a pot, add the prepared vegetables. Fry the vegetables with occasional stirring.
  • 3.When it starts to smell, add 200 ml of water. Let it boil and cook over low heat until the vegetables are soft.
  • 4.Clean the shallots and add it to the boiling vegetables (just 2-3 minutes before the end of cooking).
  • 5.Drain the broth, separate the vegetables from the shallots.
  • 6.Heat 20 g of butter in a pan, add Goody Foody. I also sprinkled them with coarsely ground black pepper. Fry the slices on both sides.
  • 7.Remove Goody Foody from the pan and add the pre-cooked shallots. Fry for a while until the shallots start to pick the color.
  • 8.Add balsamic vinegar to the shallots. Turn the shallots from all sides, let it simmer for about 3 minutes.
  • 9.Drizzle the balsamic shallot with red wine and 100 ml of root vegetable broth and cook until the sauce is reduced.
  • 10.Finally, season the sauce with jam and salt. Select the shallots and strain the sauce.
  • 11.We clean the potatoes, cut them into cubes and cook them in salted water. Add soft root vegetables to the boiled potatoes and press roughly. Season with salt and white pepper.

  • 1 ks kalerab
  • 1 pc parsnip
  • 1/2 celery
  • 1 piece of potatoes
  • 5 tbsp Balsamic vinegar
  • 200 ml red wine
  • 200 ml water
  • 1 tbsp currant jam
  • black ground pepper
  • white ground pepper
  • salt
  • 40 g butter
