  • 2.Peel the onion and cut into small cubes.
  • 3.We will prepare soy granules. Put 5 heaping tablespoons of granulate in a smaller pot, add half of the vegetable broth.
  • 4.Pour boiling / warm water over the granulate, pour a little over the surface of the granulate and mix to dissolve the broth and mix with the granulate.
  • 5.Fry the onion in oil, add the hollowed-out inside of zucchini, which is lightly salted, add the peppers and let it simmer.
  • 6.Meanwhile, as the vegetables simmer, we taste the soy granules. Add delicious yeast, black ground pepper, chilli, ground nutmeg and mix the whole mixture well to combine the flavors.
  • 7.Add the flavored granulate to the vegetables and mix and let it simmer for a while.
  • 8.We will use the hollowed-out zucchini as "bowls" - zucchini pumps for the prepared mixture. Put the pumps on a baking sheet or in a baking dish.
  • 9.You can gently salt the zucchini pumps and smear them with olive oil. We evenly redistribute the prepared vegetable mixture into the pumps. You can grate vegan cheese on top of these boats.
  • 10.Bake the zucchini pumps for 15 minutes. into the oven, bake at 180 ° C. The length of baking also depends on the thickness of the carved zucchini.
