Instructions for preparing

  • 1.Fry the finely chopped onion in oil, add the rice, fry, pour a little wine, bring to a boil and then gradually, in small portions, add the wine and chicken broth. With partial stirring, cook over low heat, unless al dente, for about 15 minutes. Once the risotto is ready, season with salt and pepper.
  • 2.Fry the arugula in the butter, add the dried tomatoes, Parmesan cheese and mix with the risotto. We serve risotto immediately, very warm.
